For almost 100 years, the companies of the SALMONICA group have been catching and processing salmon in Kamchatka.
Ozernovsky RKZ (fish canning plant) No. 55 was founded back in 1928, when one of the first fish canning plants in the USSR was founded near the mouth of the Ozernaya River and began producing sockeye salmon products. Now it is a modern fish processing plant equipped with unique high-tech equipment.
The rest of the companies included in the Salmonica group appeared 20–30 years ago. In recent years, the fish plants have been completely modernized with the most modern equipment, which ensures the implementation of the entire production chain - from catching fish to its deep processing into a product with high added value.

Certified companies annually undergo a comprehensive assessment of the stability of fisheries. Our wholesale customers can easily navigate market products, knowing that they are choosing a product produced in the manner that does not undermine the natural reserves of the Far Eastern region. To be able to sell certified products, our companies were also certified according to the Chain of Custody Standard. A chain of custody certificate certifies that the manufacturer sells products from a certified fishery and that there is no risk of mixing it with any uncertified products.

Salmonica group of companies fishes for salmon on the western and eastern coasts of Kamchatka in the Sea of Okhotsk and Bereng Sea. This is one of the cleanest areas of the world's oceans. Both of these seas are the most resource-rich seas in the world.

The main catch of salmon is carried out using fixed seines in sea fishing grounds, which allows obtaining high-quality raw material for processing.

The average annual volume of salmon caught by the Salmonica group of companies is from 30 to 70 thousand tons. The main commercial species of salmon are pink salmon, sockeye salmon, chum salmon, coho salmon and char. Approximately 80% of the catch is pink salmon. The second most produced salmon species is sockeye salmon from the Ozernaya River, the annual catch of which amounts to up to 10 thousand tons per year, or about 30% of the sockeye salmon catch in all of Russia. The uniqueness of this type of sockeye salmon is that it reproduces in the world's largest salmon spawning area - Kuril Lake, which is located in the protected natural area of Kamchatka Krai - the South Kamchatka Nature Reserve.
This fish of the salmon family is best known for the bright red color of its meat and excellent taste characteristics. The main benefit of sockeye salmon is that it contains antioxidants that can remove harmful toxins from the human body. This in turn normalizes blood sugar levels and improves the functioning of internal organs, including brain. The average length of sockeye salmon is about 80 cm, weight 2-3 kg.

During its life, the fish travels enormous distances, but for spawning it always returns to the lake where it was born. More than 90% of all sockeye salmon Oncorhynchus nerka in Asia are produced in the basins of just two rivers - Kamchatka and Ozernaya. The uniqueness of the sockeye salmon herd of the Ozernaya River is determined primarily by the fact that its reproduction is almost entirely concentrated in the basin of Kurilskoye Lake, which has a relatively small water area.

During the spawning period, the color of the fish changes. The scales merge with the skin and become dark red in color, and the head acquires a greenish tint. The transformation is especially noticeable in males. The life cycle of sockeye salmon is from 4 to 6 years, then it spawns and dies.
SOCKEYE SALMON
Pink salmon is a fish of the salmon family; it is the most numerous representative of the genus of Pacific salmon (Oncorhynchus). The name of the pink salmon fish (humpback salmon) is associated with the hump on its back, which is present by nature, but before spawning it noticeably increases. Fish reach sexual maturity in the second year of life. They return to fresh water as adults at two years of age. All fry (young fishes) hatched from the eggs of pink salmon are females while the fish are in fresh water bodies. Immediately before entering the sea, some of them become males.

Pink salmon is often called Pacific pink salmon. The pink-red meat of this fish is very valuable and healthy; it is a source of a great range of vitamins, minerals and omega-3 fatty acids, which have a beneficial effect on human health.

It is not surprising that such northern peoples as the Kamchadals, Koryaks, Chukchi or Eskimos, having eaten pink salmon meat for centuries, always remained healthy and were distinguished by amazing endurance, which could shock the inhabitants of countries with a more developed technical civilization.
PINK SALMON
Chum salmon is a dietary product. Thanks to its high protein content, it is very nutritious. In sea water, the fish has a shiny silver color, its body is massive, elongated, its flesh is dense, pink in color with a slight orange tint. By the time it goes to rivers to spawn, a physiological transformation occurs with the fish. The color of the fish changes to yellow-brown with bright purple spots on the sides. The head changes, the jaws stretch, bend, and fangs appear. From this period, the fish stops hunting and feeds on its own fat reserves. The meat becomes lighter.

Depending on the time of spawning, there are two main seasonal forms of chum salmon: summer and autumn. The summer type of chum salmon grows somewhat slower compared to the autumn type of fish, so its size is somewhat larger. The summer variety spawns a month earlier, but the fall variety leaves behind many more eggs. The life cycle of chum salmon is about 7 years.
CHUM SALMON
Coho salmon is a fish of the salmon family; it clearly differs from other salmon fish by the bright
silver color of its scales, which is why it is also called “silver salmon.” Coho salmon is a valuable commercial fish, but its numbers are small. Coho salmon is highly-prized for its tender red meat, which is less colorful than sockeye salmon. Its meat contains many useful and nutritial elements, vitamins and minerals. Individuals of coho salmon, which live in the ocean, have silver sides, a dark blue back, and a hooked nose. Once in fresh water, these representatives of the salmon family change color to bright red on the sides and bluish-green on the back and head. Dark spots appear on the belly and backs of river inhabitants. On average, coho salmon individuals weigh 3-6 kg. The length of an adult fish is about 61 cm.

They are born in fresh water, where they spend a third of their lives, then move to the seas and oceans, where they gain mass, spending the second third of their life time. In the third and the last part, they return to their places of birth to give life to new generations, but die in the process of spawning.
The spawning run of coho salmon into reservoirs begins in mid-August and continues until December, which is much later than other salmon. In this regard, three types of coho salmon are distinguished: autumn, winter and summer coho salmon - depending on the time of spawning.

The duration of the entire life cycle of coho salmon is 3-4 years.

Coastal fishing
In addition to salmon, Salmonica group companies produce almost the entire range of white fish. These are pollock, cod, flounder, navaga, halibut. A separate type of fishery is the North Kuril scallop.
The company's fleet consists of coastal fishing vessels that catch and deliver the catch to coastal factories. And fishing trawlers fishing on the high seas and freezing their catches on board. These are modern, high-tech vessels, designed to process up to 200 tons of fish per day and capable of performing work in all fishing zones and under any climatic conditions. The companies fishing fleet consists of more than 40 vessels: medium-tonnage trawlers, longline catchers and a small-size fleet of the MRS type.

The fleet of the Salmonica group fishes in all fishing subzones of the Sea of Okhotsk and Bering Sea surrounding Kamchatka.

From the moment the fish is caught until it is processed, no more than 2 hours pass, which allows to maintain the freshness of the raw material and obtain high-quality products.

PRODUCTION PROCESS
Frozen products
All plants of the SALMONICA group are modern production units, equipped with the latest technological and freezing equipment from the world's leading manufacturers, which allows maximum preservation of the freshness of raw fish, as well as the nutritional and taste qualities of the finished product.

Raw bottom fish (flounder, cod, navaga, pollock, halibut) and salmon species (sockeye salmon, pink salmon, chum salmon, coho salmon, char) are sent for processing. Finished products are frozen fish (various types of cutting), frozen individually and in blocks.
Deep processing
High-tech equipment installed at the processing plants of the Salmonica group makes it possible to produce not only frozen products, but also salmon and whitefish fillets of various types of cutting (fresh frozen, salted-frozen, smoked fish fillets).
Caviar
All plants of the SALMONICA group produce salted screened caviar produced by processing fresh salmon hard roe: chum salmon, pink salmon, sockeye salmon, coho salmon. The process includes sorting, washing, screening fish eggs from ovaries, salting, adding oil and antiseptics.
They also produce frozen caviar made from salmon and cod species of commercial fish of the Far Eastern basin.
